Hi friends! Guess what?? It’s almost the weekend! I was a little worried coming home from Australia that things would be, well, depressing. Back to real life. But it was an awesome week. I have a new assistant at work and he is so much fun. We may have stories about Washington. I have to scold him not to make out with my patients’s tongues with the suction. All in good fun! Another thing to be pumped about: it’s the start of zucchini season!!!! Which means zucchini bread, cakes, muffins, all kinds of moist delicious goodies. I couldn’t resist to getting on the zucchini train asap. I wanted to try something a little different than your typical zucchini bread and remembered the buckwheat cranberry orange bread I made last fall. Ooh that was tasty. I love buckwheat because it has a little more earthy flavor, it gives quickbread a little more depth. I thought about chocolate chips, which would be delicious, but opted for a little lighter option.
Another thing. Unsweetened applesauce. Most of us probably have our opinions of yay or nay but I thought it worked well to reduce the amount of oil. You could of course use a cup of oil and omit the applesauce but it really disguises well in zucchini bread and produces in my mind an equal product.
