Hi friends! Guess what?? It’s almost the weekend! I was a little worried coming home from Australia that things would be, well, depressing. Back to real life. But it was an awesome week. I have a new assistant at work and he is so much fun. We may have stories about Washington. I have to scold him not to make out with my patients’s tongues with the suction. All in good fun! Another thing to be pumped about: it’s the start of zucchini season!!!! Which means zucchini bread, cakes, muffins, all kinds of moist delicious goodies. I couldn’t resist to getting on the zucchini train asap. I wanted to try something a little different than your typical zucchini bread and remembered the buckwheat cranberry orange bread I made last fall. Ooh that was tasty. I love buckwheat because it has a little more earthy flavor, it gives quickbread a little more depth. I thought about chocolate chips, which would be delicious, but opted for a little lighter option.
Another thing. Unsweetened applesauce. Most of us probably have our opinions of yay or nay but I thought it worked well to reduce the amount of oil. You could of course use a cup of oil and omit the applesauce but it really disguises well in zucchini bread and produces in my mind an equal product. Summer, swimsuit season is coming for us…dun dun dun.
